Evan Burkdoll: Absolutely, thanks for having me!
VFF: So, you're the owner of both Töast and Union Avenue Bar and Eatery here in Fergus Falls. Can you tell us a little bit about how you got into the restaurant business?
Evan Burkdoll: It actually wasn't always the plan! I grew up in the Fergus Falls area and ended up with my first kitchen job working under my dad, who was in the food and beverage industry. The fast-paced energy of the kitchen environment really hooked me, and I decided to go to culinary school. After that, I worked with some great chefs and honed my skills. Then, when Covid hit, I had to adapt and started "Roasted," a meal prep and catering company. That's how I met the previous owners of Töast and Union, and the rest is history!
VFF: That's a fascinating journey! Let's talk about Töast first. The Scandinavian cuisine is a unique concept for Fergus Falls. What inspired you to go in that direction?
Evan Burkdoll: You hit the nail on the head! There's a lot of Scandinavian heritage here, and Tessa Schierer, the previous owner, had this beautiful concept of bringing those flavors to Fergus Falls. I actually helped with some dishes when I was still with "Roasted." The menu features classic dishes like Swedish meatballs on toast, but we add our own creative spin and influences from our French culinary training.
VFF: Sounds delicious! And right next door is Union Avenue Bar and Eatery, offering a completely different vibe. Tell us about the concept there.
Evan Burkdoll: Absolutely! Union Avenue is all about casual dining with elevated flavors. We make everything from scratch, like our sourdough pizza dough cooked in a wood-fired oven, and fresh pasta dishes. While the menu leans Italian, it reflects my love of experimentation and having fun with food. It's a great place to hang out with friends, enjoy some good food and drinks, and experience a fun, energetic atmosphere.
VFF: We can definitely see the passion you have for food! But what about Fergus Falls itself? What made you want to stay and open restaurants here?
Evan Burkdoll: Honestly, it's all about the sense of community. Through "Roasted," I built relationships with so many families, catering their special events and becoming a part of their celebrations. That connection is what I value most. Fergus Falls may be a small town, but the people here are amazing!
VFF: That's heartwarming to hear. What message would you give to visitors coming to Fergus Falls who might be considering your restaurants?
Evan Burkdoll: Come with an open mind! At Töast, we offer a unique twist on Scandinavian classics. Don't be afraid to step outside your comfort zone and be surprised by the quality of food we offer here in Fergus Falls. As for Union Avenue, come experience the fun atmosphere, enjoy some delicious food made with fresh ingredients, and don't forget to try our cocktails – our bartenders are some of the best in the area!
